Pro: When it is resting on a bed of delicious risotto, itself floating in a sea of compote made of pureed carrot and nutmeg spices.
Con: When you flake the incredibly tender rabbit meat off the bone and are left with the highly recognizable hind legs of a bunny; consigned to have bunny bones on your plate for the rest of the meal.
Assuming you’re still in Quebec, and also assuming you’re anywhere near Montreal, *do not miss* the porky, ducky, caramelly amazingness of the foie gras tart at Au Pied du Cochon.
i got back last thursday actually. and i never made it to montreal; i was only in quebec city. 🙂 nice try though, i will have to live without foie gras (thank god really as i do not like it one bit).
